Brightly acidic with notes of citrus and malted chocolate, our microlot of Congo is a fully washed heirloom arabica (bourbon). Grown between 3600 and 5200 feet along the Eastern Border of the Democratic Republic of Congo, it is the yield of small-holder farms participating in a novel production-model that employs micro-washing stations built and maintained by neighboring farmers. The stations allow farmers to present only their finest yield to the specialty market. Once milled, coffee beans are painstakingly sorted by hand to remove any defects that the processes at the washing station did not eliminate.
